Our team have over 20 years of experience within the hospitality industry. We have owned and managed restaurants, guest lodges and even hosted events in a rainforest.

James has over 20 years experience in the catering industry and has spent much of his time as a chef. He has worked in A la Carte restaurants in Australia and Europe, ran lodges and accommodation venues with his wife Melissa and ran catering businesses in Melbourne, Australia.
He prides himself on attention to detail and creating high quality menu’s for you to enjoy.
James also runs spitroast.com with Melissa as their off-site catering business.
Melissa enjoys looking after our guests and making the process of booking and organising their events as easy and seamless as possible. She has worked in sales, ran lodges with her husband James and looks after the marketing side of the business.
She is also our events and wedding specialist and will guide you through your event or wedding with the utmost of care and attention to detail.
